- 2 tablespoons Tajin seasoning
- 1 tablespoon olive oil
- 1 cup corn (fresh or canned)
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. While the grill heats up, rub the flank steak with olive oil and sprinkle evenly with Tajin seasoning. Let it marinate for about 30 minutes.
- Place the flank steak on the grill. Grill for about 5-7 minutes per side for medium-rare, or until it reaches your desired doneness.
- Prepare the corn salsa in a mixing bowl by combining corn, diced red onion, diced bell pepper, chopped cilantro, and lime juice. Season with salt and pepper to taste.
- Remove the steak from the grill and let it rest. Slice against the grain into thin strips and serve topped with corn salsa.
Notes
Marinating the flank steak longer can intensify flavor. Substitute flank steak with skirt steak or sirloin if desired.
