- 4 chicken breasts
- 1 cup flour
- 4 tablespoons butter
- 4 large potatoes
- 2 cups chicken broth
- 1/2 cup cream
- Seasonings (salt, pepper, etc.)
Instructions
- Begin by pounding the chicken breasts thin.
- Dredge the prepared chicken in seasoned flour.
- In a large skillet, melt butter over medium heat and sear the chicken until golden brown, about 5-7 minutes per side.
- While the chicken cooks, peel and chop the potatoes, boil them in salted water until tender, then drain and mash with butter and cream until smooth.
- Using the drippings, melt more butter in the skillet and whisk in flour to create a roux; gradually add chicken broth and stir until thickened.
- To serve, place a scoop of mashed potatoes on a plate, top with chicken, and drizzle with gravy.
Notes
For extra flavor, marinate the chicken in buttermilk for an hour before cooking.
