Ingredients

  • 4 chicken breasts
  • 1 cup flour
  • 4 tablespoons butter
  • 4 large potatoes
  • 2 cups chicken broth
  • 1/2 cup cream
  • Seasonings (salt, pepper, etc.)

Instructions

  1. Begin by pounding the chicken breasts thin.
  2. Dredge the prepared chicken in seasoned flour.
  3. In a large skillet, melt butter over medium heat and sear the chicken until golden brown, about 5-7 minutes per side.
  4. While the chicken cooks, peel and chop the potatoes, boil them in salted water until tender, then drain and mash with butter and cream until smooth.
  5. Using the drippings, melt more butter in the skillet and whisk in flour to create a roux; gradually add chicken broth and stir until thickened.
  6. To serve, place a scoop of mashed potatoes on a plate, top with chicken, and drizzle with gravy.

Notes

For extra flavor, marinate the chicken in buttermilk for an hour before cooking.
