Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup grated parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh dill for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). In a bowl, marinate the chicken in dill pickle juice for at least 30 minutes.
- Beat the eggs and add salt and pepper for seasoning. In another bowl, combine the breadcrumbs and grated parmesan cheese.
- Dip each marinated chicken breast into the egg mixture, ensuring a thorough coating. Transfer the chicken to the breadcrumb mixture.
- Place the coated chicken breasts onto a greased baking sheet and drizzle with olive oil. Bake for 25-30 minutes until golden brown and cooked through.
Notes
Marinate longer for a stronger dill flavor. Use panko breadcrumbs for extra crunch.
