  • 1/2 teaspoon cracked black pepper
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch wedges
  • Wooden or metal skewers

Instructions

  1. Step 1: Prepare the Marinade

    In a medium bowl, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper. This mixture will serve as both a tenderizer and the primary flavor profile for the chicken.

  2. Step 2: Marinate the Chicken

    Place the cubed chicken into a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring every piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 20 minutes. If you have more time, let it sit for up to 2 hours for maximum flavor infusion.

  3. Step 3: Prepare the Skewers

    If you are using wooden skewers, soak them in water for at least 20 minutes to prevent them from burning on the grill. If using metal skewers, ensure they are clean and lightly oiled.

  4. Step 4: Assemble the Kabobs

    Thread the marinated chicken, bell peppers, and red onion wedges onto the skewers. Alternate the ingredients to ensure that the flavors meld together during the cooking process. Leave a small amount of space between each item to allow the heat to circulate evenly.

  5. Step 5: Preheat and Grill

    Preheat your woodfire grill (or pellet grill) to a medium-high heat, around 400°F (204°C). Place the skewers directly onto the grill grates. Cook for 12 to 15 minutes, turning every 3 to 4 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the vegetables are charred at the edges.

  6. Step 6: Rest and Serve

    Remove the kabobs from the grill and let them rest on a clean plate for 3 to 5 minutes. This allows the juices to redistribute within the chicken, making it even more tender before serving.
