Instructions
- Preheat the oven to 400°F (200°C). Prepare your sheet pan by lining it with parchment paper for easy cleanup and to prevent sticking.
- Combine the crumbled feta, cream cheese, olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. Use a hand mixer or a fork to whip the mixture until it’s smooth and creamy.
- Spread the assorted vegetables evenly on the sheet pan. Drizzle with olive oil and season with salt and pepper. Toss the veggies to ensure they’re well-coated. Roast the vegetables in the oven for about 20-25 minutes or until they’re tender and slightly caramelized.
- Once the vegetables are roasted, serve the whipped feta alongside them, garnished with fresh herbs if desired. Enjoy the rich and creamy contrast of flavors and textures!
