Instructions

  1. Combine the cubed watermelon, mint leaves, lime juice, and honey or agave syrup in a blender.
  2. Blend until smooth, ensuring the mixture is well combined and free of chunks.
  3. Strain the mixture through a fine mesh sieve into a jug, pressing down to extract as much juice as possible.
  4. Pour the watermelon mint juice into glasses and top each with sparkling water. Garnish with additional mint leaves if desired.

Notes

Use a ripe watermelon for the sweetest flavor; you can freeze leftover juice in ice cube trays for future drinks.
