Instructions
- Combine the cubed watermelon, mint leaves, lime juice, and honey or agave syrup in a blender.
- Blend until smooth, ensuring the mixture is well combined and free of chunks.
- Strain the mixture through a fine mesh sieve into a jug, pressing down to extract as much juice as possible.
- Pour the watermelon mint juice into glasses and top each with sparkling water. Garnish with additional mint leaves if desired.
Notes
Use a ripe watermelon for the sweetest flavor; you can freeze leftover juice in ice cube trays for future drinks.
