Description
A refreshing summer salad that combines savory grilled halloumi with sweet watermelon, topped with mint and a zesty lime dressing.

- 8 oz halloumi cheese
- 2 cups watermelon, cubed
- 1/4 cup fresh mint leaves, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat and slice halloumi into 1/2 inch thick slices.
- Grill the halloumi slices for 2-3 minutes on each side until golden brown.
- Combine the cubed watermelon and chopped mint in a large bowl.
- Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
- Pour the dressing over the watermelon and mint, gently tossing to coat.
- Serve the grilled halloumi on top of the salad and drizzle remaining dressing over.
Notes
Best served immediately while halloumi is warm. Store leftovers in an airtight container in the refrigerator for up to 2 days.
