Description

Crispy vegetable croquettes made with leftover veggies paired with a creamy garlic yogurt sauce.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup sautéed vegetables (carrots, peas, corn, onion, garlic)
  • 1/2 cup grated parmesan cheese
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Gather your leftover veggies such as mashed potatoes, sautéed carrots, peas, corn, onion, and garlic.
  2. Combine the mashed potatoes with the sautéed vegetables and grated parmesan cheese in a large bowl.
  3. Shape the vegetable mixture into oval patties and set up a breading station.
  4. Coat each pattie in flour, then dip in the egg, and finally cover with panko breadcrumbs.
  5. Heat oil in a frying pan over medium heat and carefully fry the croquettes until golden brown and crispy on all sides.
  6. Prepare the dipping sauce by mixing garlic, yogurt, and dill in a bowl until smooth.
  7. Serve the croquettes hot with the creamy garlic yogurt sauce on the side.

Notes

For a lighter version, bake the croquettes at 400°F (200°C) for about 20–25 minutes.
