Crispy vegetable croquettes made with leftover veggies paired with a creamy garlic yogurt sauce.

- 2 cups mashed potatoes
- 1 cup sautéed vegetables (carrots, peas, corn, onion, garlic)
- 1/2 cup grated parmesan cheese
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 cup panko breadcrumbs
- Oil for frying
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
Instructions
- Gather your leftover veggies such as mashed potatoes, sautéed carrots, peas, corn, onion, and garlic.
- Combine the mashed potatoes with the sautéed vegetables and grated parmesan cheese in a large bowl.
- Shape the vegetable mixture into oval patties and set up a breading station.
- Coat each pattie in flour, then dip in the egg, and finally cover with panko breadcrumbs.
- Heat oil in a frying pan over medium heat and carefully fry the croquettes until golden brown and crispy on all sides.
- Prepare the dipping sauce by mixing garlic, yogurt, and dill in a bowl until smooth.
- Serve the croquettes hot with the creamy garlic yogurt sauce on the side.
Notes
For a lighter version, bake the croquettes at 400°F (200°C) for about 20–25 minutes.
