- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 1 tablespoon olive oil
- Optional: cooked bacon, chopped
Instructions
- Cook the elbow macaroni according to package instructions and set aside.
- Melt the butter in a large pot over medium heat until fully liquid.
- Stir in the flour and cook for about 1 minute to create a roux.
- Gradually whisk in the milk, cooking until thick and bubbly (about 5-7 minutes).
- Reduce heat and stir in cheddar, mozzarella, and gouda until melted and smooth.
- Add mustard powder, salt, and pepper to enhance flavors.
- Combine the cheese sauce with the cooked macaroni, mixing well.
- Preheat the smoker to 225°F.
- Transfer the mac and cheese to a smoking-safe dish.
- Mix breadcrumbs with olive oil and sprinkle on top.
- Smoke the mac and cheese for about 1 hour, stirring halfway.
- Optional: Add cooked bacon on top before serving.
