Ingredients

  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 4 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup smoked gouda cheese
  • 1 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil
  • Optional: cooked bacon, chopped

Instructions

  1. Cook the elbow macaroni according to package instructions and set aside.
  2. Melt the butter in a large pot over medium heat until fully liquid.
  3. Stir in the flour and cook for about 1 minute to create a roux.
  4. Gradually whisk in the milk, cooking until thick and bubbly (about 5-7 minutes).
  5. Reduce heat and stir in cheddar, mozzarella, and gouda until melted and smooth.
  6. Add mustard powder, salt, and pepper to enhance flavors.
  7. Combine the cheese sauce with the cooked macaroni, mixing well.
  8. Preheat the smoker to 225°F.
  9. Transfer the mac and cheese to a smoking-safe dish.
  10. Mix breadcrumbs with olive oil and sprinkle on top.
  11. Smoke the mac and cheese for about 1 hour, stirring halfway.
  12. Optional: Add cooked bacon on top before serving.
