  • 1 tbsp olive oil

  • 1 tsp chili powder

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the zucchini in half lengthwise and scoop out the seeds to create boats.
  2. Drizzle the olive oil in a skillet over medium heat. Add the ground turkey and cook until browned, breaking up clumps.
  3. Stir in the cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.
  4. Fill each zucchini boat with the turkey mixture, top with cheese, and place in a baking dish. Bake for 25-30 minutes until the zucchini is tender and cheese is melted.
