- 12 oz cheese-filled tortellini
- 1 medium zucchini, diced
- 2 cups cherry tomatoes, halved
- 1 cup corn, fresh or frozen
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt, to taste
- Pepper, to taste
Instructions
- Bring a large pot of salted water to a boil.
- Add the tortellini to the boiling water and cook according to package instructions, about 3-5 minutes.
- Heat butter in a large skillet over medium heat, then add minced garlic.
- Add the zucchini, corn, and tomatoes to the skillet and cook for 3-5 minutes.
- Drain the tortellini and add it to the skillet with the vegetables.
- Season with salt and pepper to taste.
- Serve immediately, enjoying the vibrant flavors.
Notes
Feel free to add fresh herbs or sprinkle with Parmesan before serving. Best enjoyed fresh but can be stored for up to 3 days in the refrigerator.
