Description

A vibrant dish that brings summer to your table with cheesy tortellini and colorful vegetables.


Ingredients

  • 12 oz cheese-filled tortellini
  • 1 medium zucchini, diced
  • 2 cups cherry tomatoes, halved
  • 1 cup corn, fresh or frozen
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the tortellini to the boiling water and cook according to package instructions, about 3-5 minutes.
  3. Heat butter in a large skillet over medium heat, then add minced garlic.
  4. Add the zucchini, corn, and tomatoes to the skillet and cook for 3-5 minutes.
  5. Drain the tortellini and add it to the skillet with the vegetables.
  6. Season with salt and pepper to taste.
  7. Serve immediately, enjoying the vibrant flavors.

Notes

Feel free to add fresh herbs or sprinkle with Parmesan before serving. Best enjoyed fresh but can be stored for up to 3 days in the refrigerator.
