- 8 oz pasta of choice
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 cup shredded carrots
- 1/2 red onion, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup peanuts, chopped
- 1/3 cup creamy peanut butter
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once cooked, drain and rinse it under cold water to cool it down.
- Combine the cooled pasta with diced red bell pepper, cucumber, shredded carrots, thinly sliced red onion, chopped cilantro, and chopped peanuts in a large bowl.
- Whisk together the peanut butter, soy sauce, lime juice, honey (or maple syrup), sesame oil, garlic powder, and salt and pepper in a separate bowl until smooth.
- Pour the peanut dressing over the pasta salad and gently toss to coat evenly. Serve immediately or refrigerate for about 30 minutes.
Notes
Keep vegetables chilled before combining for the freshest taste. Can be customized with additional proteins or veggies.
