Ingredients

  • 2 salmon fillets
  • 1 cup cooked rice
  • 1 cup edamame (shelled)
  • 1/4 cup teriyaki sauce
  • 1 tablespoon sesame oil
  • 1/2 cucumber, sliced
  • 1 carrot, shredded
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat the skillet: In a skillet, heat sesame oil over medium heat.
  2. Add salmon fillets to the skillet and cook for about 4-5 minutes on each side, or until cooked through.
  3. Pour the teriyaki sauce over the salmon to glaze during the last minute of cooking.
  4. Place a portion of cooked rice in serving bowls and top with edamame, sliced cucumber, shredded carrot, and the glazed salmon.
  5. Drizzle with any remaining teriyaki sauce and garnish with sliced green onions and sesame seeds. Serve warm.

Notes

For extra flavor, marinate salmon in teriyaki sauce for 30 minutes before cooking. Adjust the amount of teriyaki sauce for taste.
