  • 6 eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked breakfast sausage or bacon
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste

Instructions

  1. Sautéing the Veggies: In a large skillet, sauté the diced onions and bell peppers until softened, around 5 minutes.
  2. Mixing the Eggs: In a bowl, whisk the eggs and season them with salt and pepper.
  3. Cooking the Eggs: Pour the eggs into the skillet with the sautéed onions and bell peppers. Scramble them until fully cooked, about 3-4 minutes.
  4. Combining the Filling: Add the cooked sausage or bacon to the egg mixture and stir to combine.
  5. Assembling the Burritos: Lay out the flour tortillas and divide the egg mixture among them evenly. Sprinkle cheese generously on top.
  6. Rolling the Burritos: Carefully roll up the tortillas tightly, folding in the sides.
