Description

Delicious and hearty bell peppers filled with a savory mixture of ground beef, rice, and cheese, perfect for family meals.


Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped onions and minced garlic. Sauté until softened, about 3-4 minutes.
  3. Add the ground beef and cook until browned, breaking it apart. Stir in the rice, diced tomatoes, seasoning, salt, and pepper, mixing until heated through.
  4. Stuff each bell pepper with the beef mixture. Place them in a baking dish, top with cheese, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until the peppers are tender and cheese is bubbling.

Notes

Serve with a salad or crusty bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 2-3 months.
