- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped onions and minced garlic. Sauté until softened, about 3-4 minutes.
- Add the ground beef and cook until browned, breaking it apart. Stir in the rice, diced tomatoes, seasoning, salt, and pepper, mixing until heated through.
- Stuff each bell pepper with the beef mixture. Place them in a baking dish, top with cheese, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until the peppers are tender and cheese is bubbling.
Notes
Serve with a salad or crusty bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 2-3 months.
