Spiked Watermelon Slushie Tajin

Spiked Watermelon Slushie Tajin

  • Total Time: 4 hours 15 minutes
  • Diet: Vegetarian, Gluten-Free

Ingredients

Scale
  • 4 cups fresh watermelon, cut into cubes and frozen
  • 3 ounces silver tequila or vodka
  • 2 tablespoons fresh lime juice
  • 1 tablespoon agave nectar or honey
  • 1/2 teaspoon Tajin seasoning (plus more for the rim)
  • 1 fresh lime wedge
  • Handful of ice (optional, for extra thickness)

Instructions

  1. Step 1: Prepare the Watermelon – Start by cutting a fresh, ripe watermelon into small 1-inch cubes. Remove any seeds. Place the cubes in a single layer on a parchment-lined baking sheet and freeze for at least 4 hours, or until completely solid.
  2. Step 2: Rim the Glasses – Take two serving glasses and run a lime wedge around the top rims to moisten them. Pour a generous amount of Tajin seasoning onto a small plate. Dip the moistened rims into the Tajin, rotating the glass until you have a thick, even coating of chili-lime salt.
  3. Step 3: Blend the Ingredients – In a high-powered blender, combine the frozen watermelon cubes, tequila (or vodka), fresh lime juice, agave nectar, and a pinch of Tajin. If you prefer an even thicker consistency, add a small handful of ice at this stage.
  4. Step 4: Process Until Smooth – Secure the lid and blend on high speed until the mixture is completely smooth and reaches a slushie-like texture. If the blender gets stuck, use a tamper or stop and stir the mixture before blending again.
  5. Step 5: Garnish and Serve – Pour the slushie mixture carefully into your prepared glasses, being careful not to knock off the Tajin rim. Garnish with a small wedge of fresh watermelon or an extra slice of lime. Serve immediately while icy cold.
