Ingredients

  • 1 ripe mango, diced
  • 1 avocado, diced
  • 4 cups mixed greens (spinach, arugula, etc.)
  • 1/2 red onion, thinly sliced
  • 1 jalapeño, diced (optional for extra spice)
  • 2 tbsp olive oil
  • 1 lime, juiced
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Preparation: In a bowl, toss the shrimp with olive oil, lime juice, salt, and pepper. Make sure every shrimp is coated well for even flavor.
  2. Cooking: Heat a skillet over medium-high heat and cook the shrimp for about 3-4 minutes until they turn pink and are cooked through. You’ll know they’re ready when they curl into a nice ‘C’ shape.
  3. Mixing: In a large salad bowl, combine the mixed greens, diced mango, diced avocado, thinly sliced red onion, and jalapeño (if using). Gently mix to combine all the ingredients, allowing the flavors to meld.
