Description

Hearty breakfast burritos filled with spicy chorizo, fluffy scrambled eggs, and cheese, wrapped in warm tortillas.


Ingredients

  • 2 large eggs
  • 1/2 cup chorizo, cooked
  • 1/4 cup shredded cheese (cheddar or pepper jack)
  • 2 large flour tortillas
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Cook the chorizo over medium heat until browned and crispy. Add the diced onion and bell pepper, sautéing until soft.
  2. Whisk the eggs in a bowl until well combined, then pour into the skillet with chorizo and veggies.
  3. Cook while gently stirring until the eggs are fluffy and fully cooked.
  4. Season the egg mixture with salt and pepper, then lay a tortilla flat and spoon the mixture in the center.
  5. Fold the sides of the tortilla inwards and roll it tightly from the bottom. Repeat with the second tortilla.
  6. Serve the burritos warm with sour cream and salsa for dipping.
