- 2 large eggs
- 1/2 cup chorizo, cooked
- 1/4 cup shredded cheese (cheddar or pepper jack)
- 2 large flour tortillas
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- Salt and pepper to taste
- Sour cream and salsa for serving (optional)
Instructions
- Cook the chorizo over medium heat until browned and crispy. Add the diced onion and bell pepper, sautéing until soft.
- Whisk the eggs in a bowl until well combined, then pour into the skillet with chorizo and veggies.
- Cook while gently stirring until the eggs are fluffy and fully cooked.
- Season the egg mixture with salt and pepper, then lay a tortilla flat and spoon the mixture in the center.
- Fold the sides of the tortilla inwards and roll it tightly from the bottom. Repeat with the second tortilla.
- Serve the burritos warm with sour cream and salsa for dipping.
Notes
