Instructions
- Preheat your smoker to 250°F (120°C).
- Combine the olive oil, lemon zest, lemon juice, minced garlic, dried thyme, and rosemary in a bowl. Season with salt and pepper.
- Rub the herb and lemon mixture all over the chicken, ensuring you get under the skin.
- Place the seasoned chicken on the rotisserie spit and smoke until it reaches an internal temperature of 165°F (75°C), about 2-3 hours.
- Remove the chicken from the smoker and let it rest for 10 minutes before carving.
