Ingredients

  • 2 lemons, zested and juiced
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your smoker to 250°F (120°C).
  2. Combine the olive oil, lemon zest, lemon juice, minced garlic, dried thyme, and rosemary in a bowl. Season with salt and pepper.
  3. Rub the herb and lemon mixture all over the chicken, ensuring you get under the skin.
  4. Place the seasoned chicken on the rotisserie spit and smoke until it reaches an internal temperature of 165°F (75°C), about 2-3 hours.
  5. Remove the chicken from the smoker and let it rest for 10 minutes before carving.

Notes

For best flavor, marinate the chicken for a few hours or overnight. Use a meat thermometer to check the internal temperature.
