Description
A comforting and hearty slow cooker chickpea stew that packs a punch of flavor and is incredibly easy to prepare.
Ingredients

- 2 cans of chickpeas, rinsed and drained
- 1 can of diced tomatoes
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine the chickpeas, diced tomatoes, onion, carrots, celery, garlic, and vegetable broth.
- Sprinkle in the cumin, paprika, salt, and pepper. Stir well to combine all ingredients.
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooking is complete, taste the stew and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
For added depth of flavor, sauté the onions, carrots, and celery before adding them to the slow cooker. This stew can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
