- 2 lbs chicken breasts, boneless and skinless
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 cans (14 oz each) diced tomatoes
- 1 can (15 oz) coconut milk
- 2 tablespoons tomato paste
- 2 tablespoons garam masala
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Rice, for serving
- Naan, for serving
Instructions
- Combine the chicken, diced onion, minced garlic, grated ginger, diced tomatoes, coconut milk, and tomato paste in the slow cooker.
- Add the garam masala, ground cumin, ground coriander, and cayenne pepper (if using). Season with salt and pepper, and stir together.
- Cover the slow cooker and set to low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Shred the chicken in the slow cooker using two forks and stir to combine with the sauce, adjusting seasoning if needed.
Notes
For depth of flavor, consider marinating the chicken beforehand. You can also add vegetables for added nutrition.
