Description

A refreshing and vibrant salad brimming with Mediterranean flavors, featuring roasted cauliflower mixed with capers and olives.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup capers, rinsed and drained
  • 1/4 cup green olives, pitted and sliced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper in a large mixing bowl.
  3. Spread the seasoned cauliflower evenly on a baking sheet and roast for 25-30 minutes or until golden and tender.
  4. Transfer the roasted cauliflower to a bowl and mix in the capers, sliced olives, and lemon juice.
  5. Garnish with chopped parsley just before serving.
