- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/4 cup capers, rinsed and drained
- 1/4 cup green olives, pitted and sliced
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, salt, and pepper in a large mixing bowl.
- Spread the seasoned cauliflower evenly on a baking sheet and roast for 25-30 minutes or until golden and tender.
- Transfer the roasted cauliflower to a bowl and mix in the capers, sliced olives, and lemon juice.
- Garnish with chopped parsley just before serving.
