Ingredients

- 1 pound large shrimp, peeled and deveined
- 2 ears of corn, cut into quarters
- 8 ounces baby potatoes, halved
- 1 tablespoon olive oil
- 2 tablespoons Old Bay seasoning
- 1 lemon, sliced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Lay out the shrimp, corn, and baby potatoes on a large sheet of aluminum foil.
- Drizzle olive oil over the mixture and sprinkle with Old Bay seasoning, salt, and pepper. Toss to coat.
- Fold the foil to create a tight packet, sealing in the flavors.
- Bake in the preheated oven for 20-25 minutes.
- Remove the packet from the oven and garnish with lemon slices and parsley before serving.
Notes
Serve with crusty bread or a fresh salad. Leftovers can be stored in the refrigerator for up to 2 days.
