A quick and easy shrimp boil packed with flavor, perfect for busy nights.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 ears of corn, cut into quarters
  • 8 ounces baby potatoes, halved
  • 1 tablespoon olive oil
  • 2 tablespoons Old Bay seasoning
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay out the shrimp, corn, and baby potatoes on a large sheet of aluminum foil.
  3. Drizzle olive oil over the mixture and sprinkle with Old Bay seasoning, salt, and pepper. Toss to coat.
  4. Fold the foil to create a tight packet, sealing in the flavors.
  5. Bake in the preheated oven for 20-25 minutes.
  6. Remove the packet from the oven and garnish with lemon slices and parsley before serving.
