Description

Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 6 large eggs
  • 1 ripe banana
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional toppings: fresh fruit, nut butter, maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a sheet pan to prevent sticking.
  2. Combine rolled oats, cottage cheese, eggs, banana, vanilla extract, baking powder, cinnamon, and salt in a blender; blend until smooth.
  3. Pour the batter into the prepared sheet pan, spreading it evenly.
  4. Bake for 20-25 minutes, or until edges are golden brown and a toothpick comes out clean.
  5. Allow to cool for a few minutes before cutting into squares.

Notes

For best results, use ripe bananas and blend thoroughly for a smooth batter. Experiment with toppings and variations.
