Salted Caramel Dark Chocolate Cookies with Rolo Centers

Salted Caramel Dark Chocolate Cookies with Rolo Centers

  • Total Time: 30 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup Dutch-processed dark cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 24 Rolo candies, unwrapped
  • Flaky sea salt (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats. In a medium-sized bowl, whisk together the all-purpose flour, dark cocoa powder, baking soda, and salt. Make sure there are no large lumps of cocoa powder; sift the mixture if necessary to ensure a smooth dough later.
  2. In a large mixing bowl or the bowl of a stand mixer, beat the softened butter, granulated sugar, and brown sugar together on medium-high speed. Continue mixing for about 2 to 3 minutes until the mixture looks light and fluffy. Scrape down the sides of the bowl to ensure everything is evenly incorporated.
  3. Add the egg and vanilla extract to the creamed butter mixture. Beat on medium speed until the egg is fully combined and the batter looks smooth. Turn the mixer to low and gradually add the dry flour mixture. Mix just until the white streaks of flour disappear. Avoid overmixing, as this can make the cookies tough.
  4. Scoop about one tablespoon of dough and flatten it in the palm of your hand. Place one unwrapped Rolo candy in the center of the dough circle. Wrap the dough around the Rolo, pinching the edges to seal it completely. Roll the dough between your palms to form a smooth ball. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake the cookies for 8 to 10 minutes. The edges should be set, but the centers will still look slightly soft. Do not overbake, or the caramel inside will become hard. Remove the pans from the oven and immediately sprinkle each cookie with a pinch of flaky sea salt. Let the cookies cool on the pan for 5 minutes before transferring them to a wire rack. Serve warm for the gooiest caramel center.
