- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1 egg
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 2 cups beef broth
- 2 tbsp ketchup
- 1 tbsp mustard
- 2 tbsp olive oil
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 3 tbsp butter
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Combine the ground beef, breadcrumbs, finely chopped onion, egg, Worcestershire sauce, salt, and pepper. Mix until just combined and form into meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until they are browned on all sides, approximately 5-7 minutes.
- Mix the beef broth, ketchup, and mustard in a separate bowl. Pour this mixture over the meatballs in the skillet. Cover and let it simmer for 20-25 minutes.
- Boil the peeled and cubed potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add the milk, butter, minced garlic, dried thyme, salt, and pepper to the potatoes. Mash until creamy and smooth.
- Serve the meatballs warm over a generous scoop of the creamy garlic herb mashed potatoes, drizzling some of the savory sauce on top.
Notes
For a lighter option, mix ground turkey or chicken with the beef. Add a splash of red wine to enhance flavor.
