Description

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 egg
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 2 tbsp olive oil
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Combine the ground beef, breadcrumbs, finely chopped onion, egg, Worcestershire sauce, salt, and pepper. Mix until just combined and form into meatballs, about 1 inch in diameter.
  2. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until they are browned on all sides, approximately 5-7 minutes.
  3. Mix the beef broth, ketchup, and mustard in a separate bowl. Pour this mixture over the meatballs in the skillet. Cover and let it simmer for 20-25 minutes.
  4. Boil the peeled and cubed potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
  5. Add the milk, butter, minced garlic, dried thyme, salt, and pepper to the potatoes. Mash until creamy and smooth.
  6. Serve the meatballs warm over a generous scoop of the creamy garlic herb mashed potatoes, drizzling some of the savory sauce on top.

Notes

For a lighter option, mix ground turkey or chicken with the beef. Add a splash of red wine to enhance flavor.
