Ingredients

  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 2 cups fresh mulberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon zest
  • 1 egg (for egg wash)
  • Coarse sugar for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the flour, sugar, and salt in a large bowl. Cut in the diced butter until the mixture resembles coarse crumbs. Gradually stir in the ice water until the dough comes together.
  3. Shape the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  4. Combine the mulberries, lemon juice, cornstarch, and lemon zest in a separate bowl. Set aside.
  5. Roll out the chilled dough into a 12-inch circle on a floured surface. Transfer to a baking sheet lined with parchment paper.
  6. Spoon the mulberry mixture onto the center of the dough, leaving a 2-inch border. Fold the edges over the filling.
  7. Brush the egg wash over the crust and sprinkle coarse sugar on top.
  8. Bake for 25-30 minutes until the crust is golden brown and the filling is bubbly.
  9. Cool slightly before slicing and serving.
