- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup ice water
- 2 cups fresh mulberries
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon lemon zest
- 1 egg (for egg wash)
- Coarse sugar for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the flour, sugar, and salt in a large bowl. Cut in the diced butter until the mixture resembles coarse crumbs. Gradually stir in the ice water until the dough comes together.
- Shape the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- Combine the mulberries, lemon juice, cornstarch, and lemon zest in a separate bowl. Set aside.
- Roll out the chilled dough into a 12-inch circle on a floured surface. Transfer to a baking sheet lined with parchment paper.
- Spoon the mulberry mixture onto the center of the dough, leaving a 2-inch border. Fold the edges over the filling.
- Brush the egg wash over the crust and sprinkle coarse sugar on top.
- Bake for 25-30 minutes until the crust is golden brown and the filling is bubbly.
- Cool slightly before slicing and serving.
