Pumpkin Spice Puppy Chow Snack Mix Recipe

Pumpkin Spice Puppy Chow Snack Mix Recipe

  • Total Time: 15 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 9 cups Rice or Corn Chex cereal
  • 1 ½ cups white chocolate chips
  • ½ cup creamy peanut butter (or almond butter)
  • ¼ cup unsalted butter
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 1 ½ cups powdered sugar
  • Optional: ½ cup pumpkin spice M&Ms or pecans for extra crunch

Instructions

  1. Measure out 9 cups of your preferred square cereal into a very large mixing bowl. Make sure the bowl is big enough to allow for easy tossing without crushing the cereal. Set this aside while you prepare the coating.
  2. In a medium microwave-safe bowl, combine the white chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring well after each session. Continue until the mixture is completely smooth and melted. Be careful not to overheat the white chocolate, as it can seize easily.
  3. Once the chocolate mixture is smooth, stir in the pumpkin pie spice and vanilla extract. Whisk until the spices are evenly distributed throughout the liquid. The aroma at this stage will be incredible!
  4. Pour the warm chocolate mixture over the cereal in the large bowl. Using a rubber spatula, gently fold the mixture together until every piece of cereal is thoroughly and evenly coated. Work quickly but carefully to prevent breaking the cereal squares.
  5. Place the powdered sugar into a gallon-sized plastic bag. Transfer the coated cereal into the bag, seal it tightly, and shake vigorously. Ensure every piece of cereal is covered in a snowy layer of sugar. If you prefer a thicker coating, add an extra quarter cup of powdered sugar.
  6. Spread the snack mix out onto a large sheet of parchment paper or a baking sheet. Let it cool completely for about 20 minutes so the chocolate sets. If you are adding M&Ms or nuts, toss them in now. Store in an airtight container until ready to eat.
