  • 1 scoop vanilla whey or plant-based protein powder
  • 1 tablespoon chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup pumpkin puree (unsweetened)
  • 1 shot of espresso or 1/4 cup strong brewed coffee (chilled)
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon maple syrup or stevia (optional)
  • A pinch of sea salt

Instructions

  1. Grab a mason jar or a small glass container with a lid. Add the rolled oats, protein powder, chia seeds, pumpkin pie spice, and a pinch of salt. Stir these dry ingredients together with a spoon until the protein powder is evenly distributed. Breaking up any clumps of powder now ensures a smoother texture later.
  2. Pour in the pumpkin puree, the shot of chilled espresso (or strong coffee), and your milk of choice. Add the maple syrup if you prefer a sweeter taste. Use a spoon to stir everything vigorously. Make sure you scrape the bottom and sides of the jar to ensure no dry pockets of oats or protein powder remain. The mixture should look slightly liquidy, as the oats and chia seeds will soak up the moisture overnight.
  3. Seal the jar tightly with its lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though overnight is best for the creamiest consistency. When you are ready to eat, give the oats a quick stir. If the mixture is too thick, splash in a little extra milk. Top with a dollop of Greek yogurt or a sprinkle of cinnamon, and enjoy cold.
