- 1 scoop vanilla whey or plant-based protein powder
- 1 ½ cups frozen pineapple chunks
- ½ cup unsweetened coconut milk (from a carton or can)
- ½ cup ice cubes
- 1 tablespoon lime juice (optional, for zest)
- A splash of water or extra coconut milk if needed for blending
Instructions
- Start by adding the coconut milk and lime juice to the bottom of your high-speed blender. Adding the liquid first helps the blades spin freely and prevents the frozen ingredients from getting stuck at the bottom.
- Add the scoop of vanilla protein powder on top of the liquid. Next, add the frozen pineapple chunks and the ice cubes. Using frozen pineapple is key to achieving that thick, slushie-like texture without needing too much extra ice.
- Secure the lid and blend on high speed for about 45 to 60 seconds. If the mixture is too thick, stop the blender, scrape down the sides, add a tiny splash of water, and blend again until the consistency is smooth and frosty.
- Once the mixture looks uniform and creamy, check the thickness. If you prefer a thinner drink, add a little more milk. If you want it thicker, add a few more ice cubes and pulse until incorporated.
