Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 2 tablespoons lemon juice (for glaze)
  • Pink food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, combine the melted butter, eggs, fresh lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Spread the batter evenly in the prepared baking dish.
  6. Bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. While the brownies are cooling, mix the powdered sugar, milk, lemon juice, and food coloring in a bowl to create the pink glaze.
  8. Once the brownies are completely cool, drizzle the glaze over the top.
  9. Cut into squares and serve.

To store, place in an airtight container at room temperature for up to 3 days or refrigerate for a week. For long-term storage, freeze for up to 3 months.
