- 8 oz rotini pasta
- 1 cup fresh basil
- 1/4 cup pine nuts
- 1/2 cup grated parmesan cheese
- 2 cloves garlic
- 1/2 cup olive oil
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella pearls
- 1/2 cup kalamata olives
- 1/4 cup toasted pine nuts
Instructions
- Cook rotini pasta al dente according to package instructions. Drain and set aside to cool slightly.
- Prepare the basil pesto by combining basil, pine nuts, parmesan, garlic, and olive oil in a blender or food processor. Blend until smooth, adjusting the consistency with more olive oil if needed.
- Combine the cooked pasta, pesto, halved cherry tomatoes, mozzarella pearls, kalamata olives, and toasted pine nuts in a large mixing bowl.
- Toss everything together until well coated. Serve immediately or refrigerate until ready to serve. Enjoy!
Notes
Use quality extra virgin olive oil for the best flavor. This salad can be made ahead of time for better flavors.
