Description

This recipe combines a spice rub with smoky flavors for a tender and juicy tri tip, perfect for gatherings or cozy evenings at home.


Ingredients

  • 1 tri tip roast (23 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 2 tablespoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • Wood chips for smoking (oak or hickory)

Instructions

  1. Preheat your smoker to 225°F.
  2. Combine salt, black pepper, garlic powder, onion powder, and smoked paprika in a bowl.
  3. Heat a skillet over medium-high heat and add the olive oil. Sear the tri tip on all sides for 3-4 minutes.
  4. Place the tri tip in the smoker with wood chips, smoking for 1.5 to 2 hours until it reaches 135°F.
  5. Remove the tri tip from the smoker and let it rest for 10-15 minutes.

Notes

Slice against the grain for maximum tenderness. Store leftovers tightly wrapped for up to 3 days.
