- 1 tri tip roast (2–3 lbs)
- 2 tablespoons olive oil
- 2 tablespoons salt
- 2 tablespoons black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- Wood chips for smoking (oak or hickory)
Instructions
- Preheat your smoker to 225°F.
- Combine salt, black pepper, garlic powder, onion powder, and smoked paprika in a bowl.
- Heat a skillet over medium-high heat and add the olive oil. Sear the tri tip on all sides for 3-4 minutes.
- Place the tri tip in the smoker with wood chips, smoking for 1.5 to 2 hours until it reaches 135°F.
- Remove the tri tip from the smoker and let it rest for 10-15 minutes.
Notes
Slice against the grain for maximum tenderness. Store leftovers tightly wrapped for up to 3 days.
