Peach Blackberry Crisp with Oat Pecan Topping

Peach Blackberry Crisp with Oat Pecan Topping

  • Total Time: 1 hour 5 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 5 cups fresh peaches, sliced (about 6–7 medium peaches)
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • 1/2 cup pecans, chopped
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish or a large oval gratin dish with butter. Wash the peaches and blackberries thoroughly. Slice the peaches into half-inch thick wedges; you can leave the skins on for extra texture and nutrients, or peel them if you prefer a smoother consistency. In a large mixing bowl, toss the sliced peaches and blackberries with the granulated sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Ensure the fruit is evenly coated, then spread the mixture into the prepared baking dish.
  2. In a separate medium bowl, whisk together the oats, flour, brown sugar, chopped pecans, salt, and cinnamon. Add the cold, cubed butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Sprinkle the topping evenly over the fruit base. Place the dish in the center of the oven and bake for 40 to 45 minutes. The crisp is ready when the fruit juices are bubbling around the edges and the topping is a deep golden brown.
  3. Remove the dish from the oven and let it sit for at least 15 minutes before serving. This resting period allows the fruit juices to thicken slightly, ensuring a better texture. Scoop a generous portion into a shallow bowl while still warm. For the ultimate experience, top each serving with a large scoop of vanilla bean ice cream or a dollop of fresh whipped cream. The cold cream melting into the warm, crunchy topping creates a delicious contrast that everyone will love.
