Ingredients

- 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/4 cup almond milk (or any non-dairy milk)
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- Coconut oil or butter for cooking
Instructions
- In a large bowl, mix the almond flour, coconut flour, baking powder, and salt until well combined.
- In a separate bowl, whisk together the eggs, almond milk, honey or maple syrup, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry mixture until combined and smooth.
- Heat a skillet over medium heat and add coconut oil or butter. Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip to cook the other side until golden brown.
- Remove pancakes from the skillet and keep warm while repeating with the remaining batter.
- Serve warm with your favorite toppings.
Notes
Store leftover pancakes in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
