  • Parmesan cheese for garnish

Instructions

  1. Heat some oil over medium heat. Season the chicken breasts with salt and pepper. Cook the chicken until browned, about 5-7 minutes per side, then remove from the pot.
  2. Add orzo, chicken broth, and heavy cream to the same pot. Stir to combine and bring to a simmer.
  3. Add the sun-dried tomatoes and Italian seasoning, then return the chicken to the pot. Cover and let simmer for about 10-15 minutes until the orzo is cooked through.
  4. Stir in the spinach until wilted. Serve warm, garnished with grated Parmesan cheese.
