- 4 ripe peaches, sliced
- 1/4 cup butter
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan to prevent sticking.
- In a skillet, melt the butter over medium heat. Stir in the brown sugar until dissolved, and then add the sliced peaches. Cook for about 5 minutes until the peaches soften slightly.
- Pour the peach mixture into the prepared cake pan, spreading it evenly across the bottom.
- In a separate bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Add the milk, eggs, and vanilla extract, and mix until smooth.
- Pour the batter over the peach layer in the pan. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes, then carefully invert the cake onto a serving plate.
Notes
Best served warm, with vanilla ice cream or whipped cream. Can be stored at room temperature for up to 2 days or refrigerated for up to a week.
