Description

A delightful twist on a classic dessert featuring caramelized peaches atop a fluffy cake.


Ingredients

  • 4 ripe peaches, sliced
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan to prevent sticking.
  2. In a skillet, melt the butter over medium heat. Stir in the brown sugar until dissolved, and then add the sliced peaches. Cook for about 5 minutes until the peaches soften slightly.
  3. Pour the peach mixture into the prepared cake pan, spreading it evenly across the bottom.
  4. In a separate bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Add the milk, eggs, and vanilla extract, and mix until smooth.
  5. Pour the batter over the peach layer in the pan. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let it cool in the pan for about 10 minutes, then carefully invert the cake onto a serving plate.

Notes

Best served warm, with vanilla ice cream or whipped cream. Can be stored at room temperature for up to 2 days or refrigerated for up to a week.
