Description

Sweet, tart, and bursting with summer’s finest flavors, these homemade mulberry crumb bars combine fresh mulberries with a buttery, crumbly topping for a nostalgic dessert.


Ingredients

  • 2 cups fresh mulberries (or 1 cup of mulberry jam)
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Add the softened butter and vanilla extract to the dry ingredients and mix until resembling coarse crumbs.
  4. Press half of the crumb mixture into the bottom of the prepared dish, then spread the mulberries (or jam) evenly over the base layer.
  5. Sprinkle the remaining crumb mixture over the mulberries, covering them well. Bake for 30-35 minutes or until golden brown.
  6. Allow the bars to cool in the pan before cutting into squares for serving.

Notes

Serve warm or at room temperature, potentially with a scoop of vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days or refrigerate for up to a week.
