Sweet, tart, and bursting with summer’s finest flavors, these homemade mulberry crumb bars combine fresh mulberries with a buttery, crumbly topping for a nostalgic dessert.

- 2 cups fresh mulberries (or 1 cup of mulberry jam)
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, baking powder, salt, and cinnamon in a large mixing bowl.
- Add the softened butter and vanilla extract to the dry ingredients and mix until resembling coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared dish, then spread the mulberries (or jam) evenly over the base layer.
- Sprinkle the remaining crumb mixture over the mulberries, covering them well. Bake for 30-35 minutes or until golden brown.
- Allow the bars to cool in the pan before cutting into squares for serving.
Notes
Serve warm or at room temperature, potentially with a scoop of vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days or refrigerate for up to a week.
