- 2 chicken breasts
- 8 oz pasta (such as fettuccine or penne)
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Season the chicken breasts with salt and pepper. Cook in a large skillet over medium heat until golden brown, about 6-7 minutes per side; remove and set aside.
- Add minced garlic to the skillet and cook until fragrant, about 1 minute.
- Stir in the heavy cream, sun-dried tomatoes, and Italian seasoning. Let simmer for a few minutes until slightly thickened.
- Add the parmesan cheese and stir until melted and combined.
- Slice the cooked chicken and return it to the skillet along with the cooked pasta.
- Toss everything together and heat through for a minute or two.
- Serve garnished with fresh basil.
Notes
For a lighter version, substitute half-and-half for the heavy cream. You can also add vegetables for extra nutrition.
