A delightful side dish combining sweet carrots with tangy balsamic vinegar and maple syrup.

- 2 lb Carrots
- 2 tbsp Maple syrup
- 2 tbsp Balsamic vinegar
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Pepper
- Fresh thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C). While it heats, peel and cut the carrots into uniform pieces.
- Whisk together the maple syrup, balsamic vinegar, olive oil, salt, and pepper until well combined.
- Toss the prepared carrots in the maple-balsamic mixture until well-coated.
- Spread the carrots in a single layer on a baking sheet. Roast for 25-30 minutes, tossing halfway through for even cooking.
- Garnish with fresh thyme before serving, if desired.
Notes
To store leftovers, let the carrots cool and then transfer to an airtight container. They can be refrigerated for 3-4 days.
