Description

A delightful side dish combining sweet carrots with tangy balsamic vinegar and maple syrup.


Ingredients

  • 2 lb Carrots
  • 2 tbsp Maple syrup
  • 2 tbsp Balsamic vinegar
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Fresh thyme (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). While it heats, peel and cut the carrots into uniform pieces.
  2. Whisk together the maple syrup, balsamic vinegar, olive oil, salt, and pepper until well combined.
  3. Toss the prepared carrots in the maple-balsamic mixture until well-coated.
  4. Spread the carrots in a single layer on a baking sheet. Roast for 25-30 minutes, tossing halfway through for even cooking.
  5. Garnish with fresh thyme before serving, if desired.

Notes

To store leftovers, let the carrots cool and then transfer to an airtight container. They can be refrigerated for 3-4 days.
