Description

A healthful dessert combining creamy coconut chia pudding with sweet mango and chewy sticky rice.


Ingredients

  • 1 cup coconut milk
  • 1/2 cup chia seeds
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 cup cooked sticky rice
  • 1 ripe mango, diced
  • Pinch of salt

Instructions

  1. Whisk together the coconut milk, chia seeds, maple syrup or honey, vanilla extract, and a pinch of salt until smooth.
  2. Allow the mixture to sit for about 5 minutes to thicken.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight.
  4. Layer the chia pudding with cooked sticky rice in serving glasses and top with diced mango.

Notes

For a sweeter pudding, adjust sweetener to taste. Use ripe mango for best flavor.
