Ingredients

- 1 cup coconut milk
- 1/2 cup chia seeds
- 1/4 cup maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1 cup cooked sticky rice
- 1 ripe mango, diced
- Pinch of salt
Instructions
- Whisk together the coconut milk, chia seeds, maple syrup or honey, vanilla extract, and a pinch of salt until smooth.
- Allow the mixture to sit for about 5 minutes to thicken.
- Cover the bowl and refrigerate for at least 4 hours or overnight.
- Layer the chia pudding with cooked sticky rice in serving glasses and top with diced mango.
Notes
For a sweeter pudding, adjust sweetener to taste. Use ripe mango for best flavor.
