- 2 ripe mangos
- 1 cup heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1 teaspoon gelatin
- 1/4 cup Greek yogurt
- 1 cup honey granola
- Fresh mango cubes for topping
- Mint sprigs for garnish
Instructions
- Puree the ripe mangos until smooth.
- In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form.
- Dissolve the gelatin in a little warm water and then gently fold it into the whipped cream.
- Fold the mango puree into the whipped cream until well combined.
- In tall glasses, layer the mango mousse, Greek yogurt, and honey granola.
- Top with fresh mango cubes and a sprig of mint.
- Chill for 30 minutes before serving.
