  • 4 Bone-in chicken thighs
  • 1 Ripe mango (for purée and chunks)
  • ¼ cup Soy sauce
  • 2 tbsp Lime juice
  • 1 tbsp Fresh ginger, minced
  • 2 Garlic cloves, minced
  • 1 tsp Red pepper flakes
  • ¼ cup Cilantro, chopped
  • Rice (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs generously with salt and pepper. Heat a skillet over medium-high heat and place the chicken thighs skin-side down. Sear for about 5-7 minutes or until the skin is crispy.
  3. While the chicken is cooking, prepare the mango glaze. In a blender, combine the flesh of a ripe mango, soy sauce, lime juice, ginger, garlic, and red pepper flakes. Blend until smooth.
  4. Once the chicken is seared, flip it over and brush the mango glaze over the top. Transfer the skillet to the oven and bake for an additional 15-20 minutes until cooked through.

Notes

Ensure your mango is ripe for the best flavor; it should yield slightly to pressure. For a spicier glaze, add more red pepper flakes. Marinating the chicken in the mango glaze for a few hours beforehand enhances the flavor.
