- 4 Bone-in chicken thighs
- 1 Ripe mango (for purée and chunks)
- ¼ cup Soy sauce
- 2 tbsp Lime juice
- 1 tbsp Fresh ginger, minced
- 2 Garlic cloves, minced
- 1 tsp Red pepper flakes
- ¼ cup Cilantro, chopped
- Rice (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs generously with salt and pepper. Heat a skillet over medium-high heat and place the chicken thighs skin-side down. Sear for about 5-7 minutes or until the skin is crispy.
- While the chicken is cooking, prepare the mango glaze. In a blender, combine the flesh of a ripe mango, soy sauce, lime juice, ginger, garlic, and red pepper flakes. Blend until smooth.
- Once the chicken is seared, flip it over and brush the mango glaze over the top. Transfer the skillet to the oven and bake for an additional 15-20 minutes until cooked through.
Notes
Ensure your mango is ripe for the best flavor; it should yield slightly to pressure. For a spicier glaze, add more red pepper flakes. Marinating the chicken in the mango glaze for a few hours beforehand enhances the flavor.
