- 1/3 cup chia seeds
- 1/4 cup cooked sticky rice
- 2 ripe mangoes, diced
- 2 tablespoons honey or maple syrup (optional)
- Pinch of salt
- Sesame seeds or toasted coconut for garnish
Instructions
- Combine the coconut milk, chia seeds, cooked sticky rice, honey or maple syrup (if using), and a pinch of salt in a mixing bowl. Stir well until everything is mixed thoroughly.
- Let the mixture sit for about 10 minutes, and then stir again to avoid clumping.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight.
- Layer the chia pudding in bowls, topping each serving with the diced mangoes and sprinkle sesame seeds or toasted coconut on top before serving.
Notes
Store in an airtight container in the refrigerator for up to 4 days. Keep the mangoes separate until ready to serve.
