Description

Mafroukeh is a delightful Middle Eastern dessert made from a creamy semolina base, topped with pistachios and coconut, offering a flavorful and textural experience.


Ingredients

  • 1 cup semolina
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1 cup water
  • 1 cup milk
  • 1/2 cup chopped pistachios
  • 1/2 cup shredded coconut
  • 1/2 teaspoon rose water (optional)
  • Pinch of salt

Instructions

  1. In a saucepan, melt the butter over medium heat. Add the semolina and cook, stirring constantly until golden brown.
  2. In another saucepan, combine the sugar, water, milk, and a pinch of salt. Bring to a boil over medium heat.
  3. Gradually pour the boiling mixture into the semolina mixture, stirring continuously until thickened (about 5-7 minutes).
  4. Remove from heat, stir in rose water if using, and pour into a greased tray. Top with pistachios and shredded coconut. Allow it to cool completely before cutting into squares or diamonds.

Notes

Serve chilled or at room temperature. Customize your toppings with other nuts or dried fruits. Store in an airtight container for up to one week or freeze for three months.
