Description

A delightful cake inspired by the classic London Fog beverage, featuring Earl Grey tea and a tender crumb.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 2 teaspoons Earl Grey tea leaves
  • 1/2 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine the flour, baking powder, salt, and Earl Grey tea leaves in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Dust with powdered sugar before serving, if desired.

Notes

For a stronger tea flavor, steep the Earl Grey tea leaves in the milk for 5-10 minutes before adding. Store in an airtight container for up to 3 days at room temperature, or refrigerate for 5-7 days.
