Description

A delightful fusion of loaded baked potato and taco ingredients, these bowls are a crowd-pleaser packed with crispy potatoes, savory beef, and delicious toppings.

Ingredients

Scale
  • 4 medium potatoes, diced
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup salsa
  • Chopped green onions
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat oil in a large skillet over medium heat until shimmering but not smoking.
  2. Add diced potatoes to the skillet, then season with salt and pepper. Cook until crispy and golden brown, about 15-20 minutes.
  3. Meanwhile, brown the ground beef over medium heat, breaking it apart until no longer pink. Drain excess grease and stir in taco seasoning as per package instructions.
  4. To assemble your bowls, place crispy potatoes in each bowl. Top with seasoned ground beef, shredded cheese, a dollop of sour cream, salsa, and chopped green onions.
  5. Serve immediately while warm and enjoy!

Notes

For extra crunch, parboil the diced potatoes briefly before frying. Customize with different cheeses or toppings to fit dietary preferences.
