  • 1/4 cup fresh lemon juice

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • Frosting: 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the milk and lemon juice.
  4. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients and mix gently.
  6. Fold in the chopped strawberries.
  7. Pour the batter into a greased cake pan and bake for 25-30 minutes.
  8. Allow the cake to cool completely in the pan for about 10 minutes, then transfer to a wire rack.
  9. Beat together the frosting ingredients until smooth and creamy.
  10. Spread the frosting over the cooled cake and garnish with additional fresh strawberries.
