  • Diet: Vegetarian

Description

Delightful and nutritious no-bake energy bites bursting with zesty lemon flavor and poppy seeds, perfect for a quick snack.

Ingredients

Scale
  • 1 cup oats
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1/4 cup poppy seeds
  • 1/4 cup protein powder (optional)
  • Pinch of salt

Instructions

  1. Begin by gathering all your ingredients. Measure out one cup of oats, half a cup of your choice of nut butter, and the remaining ingredients to ensure you have everything ready for mixing.
  2. Add the oats, almond butter, honey, lemon juice, lemon zest, poppy seeds, protein powder (if using), and a pinch of salt into a mixing bowl. Mix thoroughly until all ingredients are well combined and form a sticky mixture.
  3. Using your hands or a small scooping tool, take small amounts of the mixture and roll them into bite-sized balls. The mixture should hold together nicely due to the nut butter.
  4. Place the energy bites on a baking sheet lined with parchment paper. Once all the mixture is rolled out, refrigerate them for about 30 minutes to set. Once firm, they are ready to enjoy!

Notes

These energy bites can be stored in an airtight container in the refrigerator for about one week or frozen for up to three months.
