- 1 box of graham crackers
- 1 cup of lemon juice
- 1 cup of sugar
- 2 cups of heavy whipped cream
- 4 large eggs (separated)
- 1 tablespoon of lemon zest
- 1 teaspoon of vanilla extract
Instructions
- In a bowl, combine lemon juice, sugar, egg yolks, and lemon zest, then mix until well combined.
- In another bowl, whip the cream until stiff peaks form.
- Gently fold the whipped cream into the lemon mixture until smooth.
- In a 9×13 inch dish, layer graham crackers at the bottom, followed by a layer of the lemon mixture. Repeat layers until all ingredients are used.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
Serve chilled; garnish with extra lemon zest or fresh berries. Store leftovers in an airtight container in the refrigerator for up to 3 days.
